And the Winner is...

After 3 hours of happy cupping at home (with help from mom and kids) I settled in one combination of coffees from Huehuetenango and Palencia, this one delivers full aroma, a very complex overall cup with enough acidity to bright the day, long aftertaste and excellent body, but words always will fall short, nothing like taste the real thing.

We begin our first round to know better the coffees we wanto to work with for the next P11 formula, our first demos will be roasted later in different options to taste what is the right one for our Café flavor and then for the Obscuro and Negro flavors. Since all Guatemalan quality coffees taste fantastic choosing one or two is a very hard task.

Semana Santa en Guatemala 2012, Part III (Final)

Alrededor de las procesiones, Antigua Guatemala ofrece atracciones arqueológicas, como son las visitas a las ruinas de iglesias destruidas por los terremotos, la Universidad de San Carlos y El Palacio de Los Capitanes Generales (recien restaurado) entre otros. Es curioso observar que tras las procesiones, los equipos de limpieza de la ciudad van recogiendo los restos de aserrín de las alfombras y en cuestión de minutos las calles quedan completamente limpias.

Today I bought coffee from Finca San Guayabá because I am almost ready to design a new P11 formula for the end of the year. As you already may know every 8-12 months we at P11 start from scratch and show up with a totally new flavor, maybe you will like it maybe you won't but that's the way we see coffee. No fear!

Indudablemente la noche le da otra sensación al paso de las procesiones, los vecinos preparan alfombras en la madrugada para que esten listas al paso procesional del día siguiente, la gente se arremolina en torno a las calles y un ambiente de alegría y fiesta se siente en toda la ciudad.

Semana Santa en Guatemala 2012, Part I









La Semana Santa en Guatemala adquiere un tono muy especial si visitamos Antigua Guatemala para estas fechas. Las procesiones alegóricas a la pasión de Jesús recorren las calles de día y de noche con bandas que las acompañan y multitudes de personas siguen los recorridos durante la semana completa. Las calles son adornadas con alfombras de aserrín de colores en intrincados diseños como ofrendas al paso del Señor y las andas que lo acompañan con la Virgen y otros Santos.
